Did you actually check your converted video files (mp4) actual profile used?
Use
MediaInfo to check your video file's actual profile used, as well as the audio format.
For example, I downloaded
Taylor Swift's Love Story (Taylor Version) YouTube video using one of those online YouTube downloader to get the mp4 video file. I then analyse the file using MediaInfo.
The result of the analysis was:

Based on the above information, I guess it will not play because it was encoded with High Profile, although it is below 8 Mbps bitrate (3.4 Mbps from the info above). Check
Wikipedia entry for H.264/AVC, Profiles section to understand what I mean by High Profile.
Car head units have limited processing power, therefore the limitation to Baseline Profile, Main Profile and Advanced Simple Profile.
