Applying housing loan after starting new job

Hello all
I'm currently thinking of buying an apartment, ~500k. The issue is that I just resigned few days ago, and will be starting my new job after New Year's (the pay is a lot better)
However I understand that banks are reluctant to offer loans if you're just starting out a new job. Will I need to wait 3/6 months before applying? Don't want to miss out on the HOC.

Thanks for reading. doesnt matter as long as you could prove you have sufficient capability to support the loan.. offer letter can be 1 of your supporting..
