If you want to dual boot, with option to choose which OS during boot, you need to keep the HDD connected so that Win 10 create boot option. Not sure will it create issue as that link.
I done dual boot Win 10 before, on 1 SSD with 2 partition.
When boot first Win 10, first partition is C: while second partition is D:
When boot second Win 10, second partition is C: while first partition is D:
So by right each Windows only write system files on their own partition and doesn't interfere other partition. I don't know if Win 7 will make changes on the boot which caused it to break or anything. You also should avoid using another disk as pagefile as that might cause issue, Win sometimes auto set other drive use for pagefile.
