I do my own dry aging. 30 days / 45 days / few months.

Or you like fresh waghyu ?

Small scale no issue for own consumption. I got ribeye aged for more than a year already haha. Scared when look at it.

Taste be strong. Wagyu fresh already soft juicy meat. 30-45 days age be good deal.
