Question, why not DP instead of HDMI?
I'm currently using a Macbook Pro 16 connected to a 4K IPS monitor @ 60Hz via USB C (Display Port with PD of 90w to charge my Macbook) - single cable.
USB C Hubs will just draw more power from your Macbook and at the end even the highest PD monitor @ 90w will not be sufficient for your usage. My suggestion is to go with USB C Display Port monitors.
I doubt there is a 100w PD monitor in the market, except the Pro Display XDR or close to 100w is the LG Ultrafine 5K. Highest so far is 90w PD and thats it.
I can get Ultra 4K & HDR on Netflix via Bootcamp. However, be wary of the scaling issues with MacOS on 4K (3840*2160) - icons will be very tiny. Its fine on Bootcamp thou.
