It is fine with some Ambient sound la....impossible can perform 100% ANC XD 95% and above is very nice already.

I own both Airpod pro and wf1000xm3.
For me, Airpod pro ANC is better. It did cancel blower fan noise. For WF-1000XM3, it still able to heard some wind noise even I have wear the largest eartips they provide. For Airpod Pro I using the M size.

Airpod pro wins on the connectivity stable, able support multiple device and comfort for wearing more than 4 hours.
Wf1000xm3 wins on the sound quality and able to tune the music output as your preferences.
Both ANC did a good job however for ambient sound, airpod pro is better because it can replicate the true ambient sound however for wf1000xm3 sounds too loud even the ambient sound not that loud.
