im kinda of confused now, which NVMe ssd i can buy now?
Any M.2 NVMe SSD will do
But since your motherboard does not have an M.2 slot, you will have to buy an add-on card so that you can install the M.2 NVMe SSD into the PCI-e slot

Something like this:

Downside: If you use NVMe SSD in your ITX motherboard, you can no longer install a discrete GPU into the motherboard because your motherboard only has a single PCI-e slot

Just use normal 2.5" SATA SSD
Or change the motherboard to a motherboard that has more than 1 PCI-e slot
