One thing is no need to connect to iphone hotspot. Save the battery for ur iphone.
Secondly, using iPad as hotspot is good becos iPad has huge battery, it will be way comfortable than using iPhone as hotspot due to the battery life.
Lastly, if u go overseas and u buy overseas SIM card, u can put inside iPad to use and share connections to ur other devices without swapping out the main SIM card from ur iphone. Of course if you have newer iPhones that come with dual sim will be different story.
I'm using the 11Pro Max version, but hardly ever use dual-sim except when travelling like you mentioned. Problem is, its hard to find e-sim for other countries

Most of the time will resort to remote wifi like Roamingman.

Turned it off since Day 1 lol. Redundant app for me.
For my case its probably the LTE + AM Streaming + Workout app running hence the battery drain.
