I would suggest you get 3500U if you're aiming for R5, 2500U is older architecture and the GPU performance is about 10-20% lesser (from what I can see in some game benchmarks).
The prices aren't too much of a difference.
And you need to test the notebooks to see if you like the keyboard and build quality before buying.
But I'd suggest you check out Lenovo's offering.
Even without Citibank promo, you can get a good price on their devices.

Don't compare consumer line with business line laptop.
Even comparing between business line Hp probook/elitebook, Dell latitude and Lenovo thinkpads, thinkpad seem to be in a different league in its own.

People pay double for business line laptop and its worth every penny.

These ram is take out from my P1 Gen 2 (64gb) cause I’m interested what is the availability in the market, I though they packaged with micron ram, but couldn’t get any 32gb just except with Samsung so far.

Anyway under warranty you can do upgrade like ram or ssd by yourself. (Cause if such as ram issue the warranty is by your own)

This is same as what you upgrade the BIOS.
But the rest do not touch.
Keyboard , upgrade the cpu heatsink liquid.
All of them are void your warranty.
