Staying healthy with odd-hour jobs

Hi guys who work permanent odd-hour jobs (previously or currently; long term; chefs, nurses, hotel employees, etc.), do you guys have any advice on how to stay fit and healthy while working these hours (for example, 4 pm to 1 am and 6 pm to 6 am)? From odd sleeping hours to odd meal times, I find it very difficult to try to stay fit with this kind of lifestyle. My colleagues who are working similar hours are unable to help either as they are also struggling with this.
If quitting the job is not an option, what are some of the healthy habits that you could recommend based on your current lifestyle/personal experience that have proven effective so far?

If I were you & given that work timing.
I could wake up to a simple coffee & bread. I'd go gym before work starts. Spend around 1.30 hour in gym is good enough. Any gym at your workplace or on the way there so you could get fit & groom yourself there? You can totally skip the preparation at home. Keep a cereal, nuts, fruits if you have to.
You can keep fruits in containers so you can grab & go. Having that fruits blender is useful when you can drink all the fibers.
You probably know all this. But hey, get together all your pals who are working same timing as you & get them to practice this with ya.

Do you know your schedule in advance? I am working in a 24-hour call center so I have to come to work at varying times every day. It all depends on my team leader. He sets the schedule each week and we usually know our schedule on Fridays. In my case, once I get my schedule I'll plan ahead what I'm going to do each day-- when should I squeeze in 1-hour at the gym, preparing my food, etc. Everything should stay the same except the time when I go to sleep.
