as long as u backup 11.1.1, then upgrade to 11.2 and perform another backup ( now u have 2 backups = 1 for 11.2 and another older for 11.1.1), once u downgrade ios, u can backup the older one.... hmmm its very easy to downgrade firmware, but first u need to make sure the firmware u wanna downgrade is still signed by ipsw (https://ipsw.me/ = check availability). if its not signed means cannot downgrade..

EDIT: just checked 11.1 is not signed anymore... so yea u cant downgrade it..

Depends on ur usage but should be enough for most people...just backup files once every few months if you are on heavy usage..
