I stopped at Chapter 2 but I got 2 method that you could try.
Either you check the picture book for hints or if you haven't collected the page for that monster, try to hit it with all the different folks you got. When you can see the Jelly Folk's soul popping out when you hit it, it means that the Folk attack you used, is the right one. |

You could always go back to the previous realms to collect those Folks again
