I think it's simply marinated and grilled...at least that is what it looks if u manage to see smn...i believe they marinate with garlic and herbs like rosemary....then it's all in the sauce

Used to work for Nandos. The chickens came marinated in sealed bags daily for the cooks to throw them on the grill.

Based on the colors, it could be the Peri sauces used to marinate them.

Each Nandos has its own local supplier to deliver the chickens to the outlet.

Some upclass supermarkets sell Nandos Peri peri Salt. It's the exact same thing they put on their fries.

Buy the sauce and marinate overnight, when u grill or bbq brush the chicken with sauce several times.

If u insist on making ur own i think local and imported ingredients aren't the same especially the chilies

The same holds true for korean chili flakes and indian dried chili. Small detail such as this can not be overlooked.

Just a general saying because i used to make kimchi using normal dried chilies, i thought it wasn't a big deal but the result was so much different.

In this case maybe we can't get close to the original nando's recipe because of the serrano chili and african bird's eye chili. Can substitute with our local chili but i think tastewise won't be the same.

Spices and ingredients quantity also another factors.

Just buy the sauce and marinate overnight. Remember to brush extra sauce when grill.
