If you have not meddle with jailbreak iPhone before, it is very likely that you are using the latest iOS version, which of course, is un-jailbreakable as of yet.
The latest jailbreak-able iOS is version 10.2.1, so if you're using the version any higher than this, then you're out of luck currently.
However, if you did happen to have a jailbreak-able iPhone, good news, just download a tweak called NGXPlay from the Cydia, as mention by our fellow @giggs_509.
The apps setting allow which app to be toggle on in CarPlay, with two options for them.
1. Native - Natively run the apps in the CarPlay interface, so all touch interface are working and communicating directly just like how you will use your apps in Landscape mode. The phone screen remain off, just like any other native CarPlay app.
2. Mirror - mirror the app screen into the car display. This is a usually a second resort if the first option is not compatible for some reason. This however, will not give you any touch feedback and communication through the car display. It merely mirror the display onto the car screen. Any interaction required is through the phone itself.
If I can find some time, I will post some screenshot. But for now, this is basically the steps. The toughest part would be the jailbreaking part I suppose.
