 Chinese+Malay mix girl, but walk like a non Muslim

So recently I met a very open minded Chinese/Malay mix girl. Open minded here means that she do eat BKT, char siew rice etc and not a virgin. Basically she is living like a non Muslim life.

I'm a Chinese dude. Since she doesn't practice the intended religion, do you guys think that whether I should start a long relationship with her even to the extend of settling down with her together.
