Got the i7 in 2012, and it's been running well at 4.4ghz since day1. However temps always bothered me slightly and since I don't plan to upgrade for another few years, why not lower the operating temps?
CPU : i7 3770k @ 4.4ghz, Vcore=1.19v
Cooler : CM 612s with 2x Gentle Typhoon's in Push-Pull
Note that the TIM used between the CPU die and IHS is critical - Collab Liquid Ultra or any other TIM with "liquid metal" properties is recommended.
BEFORE
Max temps with prime95 Small FFTs were a toasty 86c.
AFTER
Max temps with prime95 Small FFTs was 65c. Drop of 21c!

I can reach higher clocks (CPU can do 4.7ghz), but will leave it at 4.5ghz (1.22v, ~70c max).
Is it worth it? Absolutely, although you'll void your warranty.
With the newer CPUs (e.g. Skylake, Kaby Lake) it's best to get a proper delidding kit as the CPU wafers are really thin, or use the razor method if you're brave.
