Three major reasons:
1) Optical clarity of LCD screens are not as good as proper viewfinders (you should look through the viewfinder of cameras such as the classic Canon F1 to fully appreciate this. It is absolutely brilliant.)
2) The partially reflective mirrors which allow some light through to fall onto the sensor for 'live preview' would result in available light being split.
3) You save on battery.
