Except for this point:
A magnetic/Direct Online starter normally has a Thermal Overload Relay inside, which is supposed to trip just in case the air cond starts pulling more current than it is supposed to. This TOR may be set as low as 3.5 - 4 Amps, meaning your socket extension can only supply that much current.
I would suggest:
You just remove the DOL starter and put a 13/15A socket in its place. The DOL starter is already surface mounted, so a socket surface mounted in its place should look a little less conspicuous and a little less obtrusive.
