I have one MacBook pro is due for AppleCare add on.
If I did not buy it, is it very high risk?

Spend on the AppleCare, so your macbook will be secured around 3years if I'm not mistake. Nope, didnt get the Apple Care, though my rMBP had faced problems with the speakers (1 side blow) and the "staingate" issue.
Other than that, no problems so far. |

If your mac has survived the initial 1 year, usually there won't be any more problem next couples of years.
It's up to you whether to get the AppleCare especially if you have $$$. |

It's happen to me, 1 year survived without any problem, now is almost 4 years working perfect It's up to you whether to get the AppleCare especially if you have $$$.  |
