Usually commercial leather is made from the skin of beef cattle that has already been slaughtered for meat. It would be impractical and dangerous to try and skin an animal alive. What would possibly the purpose?

I'd say if the cow is skinned right after slaughtering skin will still be as elastic. There won't be much difference AFAIK. They're aiming to get the meat in the first place, with the leather as a byproduct, so they will process the carcass while it's as fresh as possible.

It's not like they skin the cows a day after. Donno about you though.
