In episode 8, it is hinted that Dolores is currently having delusion that she is with Williams, while actually she is only remembering the events happened in the past while she was with Williams. She cannot differentiate reality and memory because all hosts have perfect memory.
In her memory, Williams was slowly changing to a much colder person, which fits the theory that MiB is actually Williams and MiB had claimed that he was born in the Westworld. MiB was probably causing Dolores to remember back in episode 1 while he dragged Dolores into the barn and had done something to her offscreen.
