1. If you want to join a group tour around EU, can start and end in London (7 ~ 30 days trip)

2. If you want to choose only 1 city can try those medieval city like Rome, Prague or Edinburgh.

But to each country is their own. I will definitely go to EU multiple times in future and visit some other cities

As mentioned by bro knwong, every city is unique and has different thing to see / do.
Also europe is very small, you can go around multiple cities / countries easily by train, don't restrict yourself to one.

London / Paris are best bet.
Milan / Rome if you like Italy.
Barcelona if you like Spain / Portugal.
Frankfurt / Munich are great transit hub to other European cities.
Zurich for Alps.
Missed out Amsterdam, which is another great city.

If you can't make up your mind, let seat availability determine your destination.

I will not travel to Europe in foresearable future, they are very racist atm.

Fly out from London is expensive, as the tax for premium cabin is high, u need pay more in cash.
Btw London is one of the most unappealing city in Europe, not sure why so many people suggest travel to London.

Ya prefer to visit some place which is calm and slow pace now.
I surveyed the mode of transport to Tasmania,  Spirit of Tasmania vs flight (MEL - HBA) and found that flight is cheaper and faster than the ferry . You taking ferry due to vehicle rent from MEL ?
