No la, I used Maybank cards in China before. I used to travel to China very often.
This happened in big cities like Beijing. If smaller cities and province, you can forget about it, none of our cards will be accepted regardless local or international banks. I have gone to Chongqing, Chengdu and Yunnan and they didn't accept our cards. So, I used UnionPay debit card issued by ICBC Malaysia and also AliPay and WeChat Wallet there because it is so common to scan QR code for any payment.

For McD's, you don't need PayWave, just slot in card also accepted. I used to slot in my HLB MACH and until they replaced my card, I only started using PayWave feature. Any credit card, not only limited to Maybank actually.

Nope, ICBC debit card is not allowed to reload anything for WeChat Wallet or even AliPay. For reloads, it must be a China bank card which is applied in China as it needs to go through verification of NRIC (for Chinese citizen) and passport no. (for foreigners).
For us who don't have a bank account opened in China, our only choice is only using credit card to charge and not reload.

Why ICBC and BoC? When I applied that time in 2013, only ICBC Malaysia accepts GIRO from other banks, so I can transfer fund from my Maybank account to ICBC and convert it to RMB using ICBC Online. After so many years, I think BoC in Malaysia also starts accepting GIRO but I don't bother to apply anymore. One UnionPay card is enough.

For McD's, it is PayWave, so won't be accepted. Your option is only slot in card.
