One of my favourite method is to slowly ramp down the pressure to around 6 bar before reaching my desire extraction weight.

PS: Ignore the red switch. Previously use the red switch to manually switch on the heater for old Poemia espresso machine. Not use in Gemilai. The potentiometer come with the solid state regulator resistance is too high and at minimum will stall the pump.

I did tried SOL coffee, and mainly use it for espresso brew with milk. Single origin specialty can be hefty, I tried Esmeralda Geisha bean on V60 brew, the taste was totally different.

However back to this coffee selection, everyone has different taste bud, expensive specialty that is good for you does not mean it is good for other. I only trust my taste bud which suit my preferences.

I am sharing my coffee preferences journey for the past 2 years. Below are my preference for espresso brew with milk for daily consumption:
1. SOL El-Salvador Blend - this is the only blend I like, I tried the other blend but doesn't like the taste.
2. ForestCloud Lunarfall - I tried more than 2kg of beans from their Lunarfall blend, never failed me. But one thing I notice their bean loose their taste after 1 weeks of opening, I had to change my grinder setting after a week. I like their 250G packaging that allow you consume what you can during the 2 weeks period.
3. Sin Boon Kee Arabica Signature Blend - SBK historically famous for their penang kopi o. I was hesitated to try, but in the end get myself a pack. I was surprised by their caramel taste. Nevertheless, I tried using this for moka pot brew was well and it taste great if you like heavy body and bitter note.

These 3 are my preference when coming to espresso brew with milk. Don't get me wrong, I did try others like Mister Coffee Arabica bean, and their Espresso Super Bar bean as well. Occationally I did try Big Tree Dark Roast, JWC Caramel PopCorn as well.

My coffee routine doesn't stick to one type of brand and roast, it depends on my mood and roast availability as well. I would prefer to go for V60 brew, if I were to try out the specialty coffee.

If I am experimenting or dial in the machine, I normally will goes for those average bean like Mister Coffee, SOL or SBK.

End of days, your taste bud matter and good quality bean with good roaster definitely helps.
