Many AirBnB hosts are cancelling because they do not have the hotel license, which makes it illegal for them to rent out rooms to guests, except for hosts in Ota Ward in Tokyo, and even then it is limited to guests staying 6 nights and above.
Best option now is to look at accomodation in Osaka or Nara, Kyoto is just fully booked over that period.
