If you don't mind Chinese rom, flash the official 7.0.22. Just remember to stay away from the child mode!

If you want google apps pre-installed, you have to go for the custom roms. But custom roms have no OTA. If you get the official China rom, it has no gapps but it can be installed manually easy enough.

No need, OTA updates won't wipe off anything.
