well usually WoW's team-oriented. You can't get all the uber items all by yourself, unless you can somehow managed to farm like 20 rare drops at 1 go but, it's just very very very difficult

for easy intro and startups, i'd recommend a druid or a paladin. Both are hybrids with healing abilities so it shouldn't be hard to play, although in druid's case, you have to be really patient with some of their "class quests" ie. Bear Form, Aqua Form (and possibly Cat Form and Travel Form prior to new patch).

check for 'new' servers (or low population) either through the server selection screen or worldofwarcraft.com realm tab. But be warned: market economy sux for new servers so it'd be hard for you to accumulate wealth "merchant style"
