If one is given the magic brew & all the memories are erased, why do we pray our ancestors? Assuming they drank the brew, our ancestors probably forget who we are?

It doesn't matter if they have forgotten you or not.

They are still your ancestors, no?

Besides, given the fact that...

1. You and I have no way of knowing if our ancestors have been reborn or not, and
2. It usually takes decades to centuries for someone to serve their sentence in Hell

... the safest play is to assume that they have not yet been reborn, and continue praying for them.

'Ngor Lui Sian Soo' translates to 'Wu Lei Xian Shi'/五雷仙师 or Master of the Five Thunders.

The name is not familiar to me, but suggests that he is a thunder deity of some description.

Recently one of peer passed away. Was wondering what's the ritual process, deity roles whom are involved in the ritual, and the 7 7 49 days thing?

Yes, it can and does happen.

The Hell deities are the spiritual police, whereas the Heavenly warrior deities are the spiritual army.

If a threat that the police can't deal with is present, the police will escalate and refer the problem to the army.

Interesting. Whom do they work with from heaven?

Of course there is collaboration.

Here is a picture of a Tua Ya Pek medium exchanging pleasantries with a medium channeling Sangili Karuppan, the Hindu equivalent of Li Ya Pek.

People these days like to describe it as tea.

But the old legends explicitly state that it is a disgusting concoction primarily composed of animal blood.

I hate bowdlerisation.

I've been told it's called "mang po tong" @grandma's blind soup lol
