You should talk with your boss and tell him your problem instead of telling your problem to a psychologist.
Now you know that the source of your anxiety is your IT Project. Solve that issue and your anxiety will go away.

As you can see, using emotion-focused coping only helps you to distract your attention from your work issue temporarily. So, emotion-focused coping will not ease your anxiety in the long term.
Quitting your job will certainly lift the burden but as you said, you still need to serve the notice until January. By this time, the project is expected to be completed. So, quitting is not the wise option now. But if you know there will be another huge project coming next year, you might want to consider quitting. But first of all, always discuss the problem with your boss first.
