I think I found the way to handle this kind of "kick off" waltz attack.

1) Select your midfield player when kick off. (I usually have De Rossi as CDM or Vidal).
2) When kick off, hold L2 (jockey) and move your midfield slightly backward and try to contain the ST who now will accelerate.
3) With training and patience, his ST will run straight towards your midfield player in contain position and tackle the ball out from the ST when he accelerate 

*Contingency plan* If somehow your midfield player unable to contain the ST, dont panic and quick switch to your defender to charge the ball. Hold the line and let your midfield player run and pressure the ST from behind. It will give time to your defender to position themself and try win the ball.
