I'm using 2700K too, was running 4.6GHz stable for months until I decided not to overclock anymore as the I could no longer bear the extra heat in my room.
I find a good balance of performance and heat by running it at 4.3GHz.
What you mentioned about the default 1.6GHz and auto 4.x GHz when gaming is the Intel Speedstep must be turned on for dynamic frequency switching based on load.
overclocked my I7 2700K from 3.5ghz to 4.2ghz, not sure the stable or not. please help
