Still thinking to keep SR or just take it.

Is there a chance for Shiny Latias from the island after defeating Team Aqua?

The EOS ticket can get Shiny.
But the in game one not sure.
Checked google and there is 1 that SR until almost a week and over 1K time still no luck.
Think will just get a good nature and good IV is good enough.
No Shiny Charm is hard to get shiny.

Each version will have different enemy.
Team Heat, trying to make the sun shine for 24 hours.
Team Cool, trying to make the night last for 24 hours.

Do hope that there is more pokemon that focus on day / night evolution.
