I think you will have to do it manually with iTunes.
Get info, and delete the thumbnail.
Not really sure if that'll help.

For those wondering, you will have to tap an emoji and hold it to find different skin tones for that said emoji.

How is it that all skin colors appear orange to me at default?
For example I see you guys posting the thumbs up all in orangish color. So frickin ugly. Hate the new emojis.

I have a feeling it may be region specific. For example, those in western countries may see a white emoji whereas African countries will see a black emoji? Idk man.

Try holding an emoji that allows you to select skin tone and tell me what you see at most left.
Mines the Orange/yellow skin tone for ALL emojis.
It's like the default color.

Update your iFunbox. Mine works perfectly fine.
The guys at iFunbox did a great job by releasing the iOS 8.3 compatible software so quickly.

I uninstalled iFunbox and downloaded the latest version from their official website and it's running fine here.
Note that the latest version is a beta version but it works.
