For other areas, this should be quite desirable as absorbing excess humidity is cuts down the need and frequency on relying on AC to dry the room for that cooling feeling. Can you comment on the use of this to combat excess humidity like how marble flooring would tend to do?

here. The more I read about Venetian Plaster, the more attractive I find this product has become. However, it's how it deals with excess humidity that's crucial cos it would be undesirable that the superstructure unwittingly becomes a breeding ground for mould]

we have not been logging in this forum, just read these questions of yours.
Sorry for the late.
We do not recommend Venetian plasters to be applied to shower area. Reason being, the surface area is porous and water does penetrate in, however, there will not be mold or mildew simply because the surface is breathable. It will allow water to penetrate, it will also allow moisture to dry. However, in the shower area, the surface is constantly wet. This will affect the outlook- the walls will have the wet-look all the time (darker patches of water marks).
On the other hand, due to its natural state of materials, the surface will continue ‘carbonisation’, over time, with the absorption of moisture and CO2, the surface will harden, and develop its own water repellence. Over time, you will find that the water penetration gets less, the colour of the wall will mature and stable. You will not see dark patches of wetness (as in newly installed walls), as these color variation would have been embedded in wall itself giving its own uniqueness.
We also put in a layer of cera (beeswax) as a protection & easy maintenance and this will enhance the water repellency, but it is not permanent. You can easily re-apply this cera by yourself (we do sell this to our consumer) or we can come back to re-apply for a small service charge.
Conclusion – you can have venetian plaster in shower areas, but you must be willing to accept the continuous maturing of your walls—colour unevenness, tones, depths, and let it mature over time.
As to your worry of mold/mildew-- rest assured you will not have this problem with venetian plaster-- be it marble like or the coarser finish-marmorino.
