IMO, It's a very good habit to shoot in RAW. My 1st few photos with the 350D is already in RAW, i just followed the manual provided by Canon then step by step learn to use it myself.
It's pretty easy, I do not know about the E-500 though, but i think they should be the same. Just the layout of the software is different. Btw, you do know that you need a software to develop those RAW files right? For canon, the software is called "Digital Photo Professional 2.0" and there's another one which i do not use.
Adobe Photoshop has a way to process RAW files too, but i do not know how. It seems that you need a kind of plug-in for photoshop to do so. Hmmm...
edit: you can try use uncle google to search for ways to learn how to process RAW though. Hehe
