i used to cut in between the sticker but these days i'll carefully peel off the entire sticker and paste it back inside the box.

For computer monitors, it's simple really, the bigger, the better, for me to say the least. As for your pixelation worries, you don't have to worry too much about that, that's the one major reason why everything is on HD now.

As for the ratio question, you are correct. There will be 2 small black bars on top and bottom of your screen. Make sure the monitor you're purchasing can stretch according to aspect ratio. There's quite a few out there that does not do that.

There's no black bar on 16:10 lcd. The height of the graphics will be stretch abit and the image will appear abit blurry since the 360 doesnt have a native resolution for 16:10 lcd. If you want the correct picture ratio for a 16:10 lcd, you need to get a monitor that has a 1:1 pixel mapping features and those monitors are abit expensive compared to the normal ones.
