Do you mean to do "bokeh"? To blur your background and foreground and only left your subject sharp.

Poor people's way. Get a Zoom lens, for example a Tamron 70-300mm and shot at aperture f5.6 and enjoy the bokehness.

Rich man play. Buy a 70-200mm f2.8 fixed aperture and shoot at f2.8.

Or with kit lens. Can try longest focal length and widest aperture f stop (Smallest Aperture f number).

Or if super rich, get the Leica Noctilux 50mm f0.95 and get your subject bokehed too.

DOF is a formula to do "Bokeh".

The definition for depth of field (DOF) is the distance between the nearest and farthest objects in a scene that appear acceptably sharp in an image.

DOF is the area in focus. Simple as that.

Bokeh is the area that are out of focus.

In photography, the priority is always DOF - that's where you get the subject to be covered enough to maintain the details, the bokeh is just the result of everything else.
this definition is correct though. Basically the area that is in focus.
