Unfortunately, lots of apps are beginning to require the presence of either the latest iOS or 1 version before it.
If this is your main push factor i.e. updating to get apps, then I would encourage you to proceed with the update. However, considering that your iPad 2 is a jailbroken unit, running on iOS 5.1.1, you might need to reconsider the update option as you’ll need to find the right channel to reacquire those paid apps that you got for free, if any.

Indeed. IOS 7.0.4 operates well on the iPad 2 and thus far, neither have I experienced any Wi-Fi connectivity issues nor have I encountered Safari browser crash or any other apps crash, for that matter.
It was not by choice that I updated the iPad 2 from iOS 5.0.1 (I absolutely love this version) to the latest version several weeks ago but due to unforeseen circumstance, I had to do so and now, I am glad I did as I am enjoying iOS 7 on the iPad 2 just as much as I did with iOS 5.0.1 back in those days.
Yea, I did have some time adjusting to the new iOS outlook but I got used to it on the 2nd day itself, so yea. LOL

I am not sure how much of a “lag” is forumer Bystander experiencing but mine is extremely minimal. It is still there but it is not of irritating level unless you are a perfectionist.
If ultra-buttery-smoothness is what you are aiming to experience with iOS 7.0.4 on iPad 2, the you can abandon your quest as the iOS itself is a memory hogging one and the iPad 2, which is a 2011 production, was never created to be future-proof, though there is no denial that it is doing a very good job in that aspect, in comparison to other smart tablets out there in the market.
