my answer is based on my finding and experimenting. hope anyone can enlighten me if my answer is wrong.

foremost, for analogue signal, xbox only produce stereo sound. so, based on what i found out through testing, i can't get any 5.1 sound. so now i know i can only use digital signal from xbox to get 5.1 sound.

solution: i bought the cheapest globally known brand 5.1 home theater that i can find (in my case is panasonic. please don't buy CE brand home theater. it's rubbish), connect using toslink cable through digital output and u will get a nice 5.1 sound.

i my case, my PC and my xbox connect to the same TV. to fully utilize the home theater, i bough a usb creative sound card that have digital output and connect to the same home theater using a toslink cable and i get a 5.1 setup for my PC. now my movie session is better than ever

last but not least, i sold my 5.1 logitech speaker since i do not need it anymore.

I did a check on your speaker, I don't think its possible to have a 5.1 direct input from xbox 360 as it doesn't have an optical in.

few ways you can do it :-

Xbox 360 Hdmi out > TV Hdmi in > TV audio out > Speaker audio in (Stereo)

Xbox 360 Hdmi & Composite Cable (Red White) > TV & Speaker audio in (Stereo)

Xbox 360 Hdmi out > Pre-amp Hdmi in > Pre-amp 5.1 audio out > Speaker 5.1 audio in (5.1 audio)
Pre-amp Hdmi out > TV Hdmi in (For video)

you'll need a decoder
something like good old creative DDTS-100
This

connect xbox360 optical out to decoder's optical in (either toslink or coax), then connect the green black orange to your speak front/rear/sub

For a REAL 5.1 or using surround speaker, you need a speaker with optical input.
Well, most PC speaker don't have that. Only Home theater set have optical and HDMI input.

Your only option is to use 2.1.
