GT750M SLI > GTX675M ~ GTX765M.
Please remember SLI only work on games that specifically support it. Also note the micro-stuttering effect on SLI (please google yourself).

You need to compromise a bit.
Matlab - really depends on the complexity of your simulation and how large is your data set hmm.gif
home video editing - depends on the tools you use, whether the software support CUDA or OpenCL utilising GPU for processing.
Performance wise, there is not much difference between Ivy Bridge (gen 3) and Haswell (gen 4) CPU.

If you really want i7 quad core with your budget:

If a particular model come on with 4GB or less RAM standard spec, you could insert another RAM stick (4GB ~ RM100, 8GB ~ RM200) if there is vacant RAM slot.
For the usage listed, discrete GPU is not needed. Intel HD is sufficient.

the temp is high since it pack an i7 quad core and GT755M inside a 14". If you don't like it, Z series run even more hot and the battery is inside the shell. So move on.

if by "work" you mean MS Words, Excel, then you don't need powerful CPU or discrete GPU for your usage.

that i5-750 desktop CPU is quad core (but only 4 threads), while laptop i5 is only duo core but also 4 threads (hyper-threading).
Don't really has the benchmark to compare i5-750 desktop vs a Haswell mobile (say i5-4200U), but my guess is that they are about even laugh.gif

Matlab (the newer version, and / or if you use the Parallel Computing Toolbox) can take advantage of multi-core very well.

When you observed the CPU max out, did all 4 core max to 100% or just 1 core? Max out for how long?

15" will not be light (i.e. < 2kg)
If you want thin, then the battery normally will be within the body shell.
You want heat to dissipate (not build up within the laptop).
You want good thermal profile, but thin laptop normal has worse thermal profile.
For your budget, you will not get very good screen panel (e.g. IPS), just hope for finding TN panel that you can tolerate.
If "assignment, projects" mean using MS Office, then you don't need powerful CPU or discrete GPU. i3 and Intel HD is more than sufficient.

There is no laptop that tick all your box.

That particular CPU is only about Intel Celeron level, will struggle depend on the level of photoshopping you do.
It will probably feel the most responsive among the three due to the SSD.

G500S, i3-3110M + Nvidia GT720M@RM1499, 2GB, 500GB, FreeDOS
has the most powerful CPU among the 3 models. You probably has not negotiated the price.

A550CC-XX307/308/309, i3-3217U + Nvidia GT720M@RM1699[2.3kg], 4GB, 500GB, FreeDOS

Both G500S and A550CC are > 2kg, won't call them light.
None of them has particularly good battery run time (expect ~ 4 hrs surfing hmm.gif ). Book 9 Lite due to the small battery, G500S due to the M CPU, A550CC due to the "relatively" small battery for 15".
The Book 9 Lite is ok, but you will probably curse when you use it for photoshop. iinm, RAM is soldered, there is no empty RAM slot for upgrade.

If you negotiate, you can probably get these within your budget:
