Z1: It's small and when you unlock the bootloader you lose Bravia Engine
Z Ultra: It's big which is very good but when you unlock bootloader you lose Bravia Engine.
Nexus 5:

Root and bootloader unlock doesn't void warranty and the hardware specs is the same as Note 3!
what do you mean by unlock bootloader? is it like Sony's own Xperia rom and Samsung's Touchwiz rom?
i didnt knew that Nexus 5 is having the same HW spec as note 3 for 1/3 of the price! might give it a try soon

just worried about some modem or whatever setting that is not compatible. just worried about that. besides that, still trying to grasp this KNOX thingy... how will it trigger? some roms say its KNOX free, but dun really understand what it means... yet... haiz... pengsan.
as for roms, at first was keen on DN3. read about some issues (on XDA, can't recall). then read up phoenix but also saw some comments about camera -- camera function important for me.
if the MODEM is not matching it might reset your IMEI number
KNOX, IIRC is like an spyware or antivirus program, if you root, it might trigger knox counter

so if sent back to warranty, Samsung technician might know you rooted your phone by checking it, you also can check in the Download mode.
DN3 or Phoenix rom are mostly based on TW, with major samsung apps running such as SNote and using back the original samsung camera. Those rom like Paranoidandroid or AOSB, are based on vanilla android, which seen on Google nexus and Motorola X...
I tried DN3 and Phoenix, both very nice UI and display, but ram management no good...85% usage on normal, and is on 4.3version...so battery life no so good as in 4.1.3
