in-ear phones, or canalphones, have better sound quality than standard earphones. This is because of the ability to reduce noise interference from outside.
they usually offer more deep bass too, so you get a really cool, rich sound. im currently using Philips SHE9500 Canalphones, but they are really average only..you should check out the SONY ones.

headphones im not sure, but i think in-ear phones are better than regular EARphones. But i bet expensive high-end Senheiser Headphones kick everything elses a$$.
