It's rubbish to say a working 5-7 year old tyre as unfit for continuing use or be condemned from use .....
simply because it 'cured' longer and 'hardened' with age!

Basing on tread depth of 1.6 mm, I would reckon generally 60-70k km, i.e about 3 years.

It is normal for front axle tyres to wear off faster than rear axle tyres , whether FWD or RWD .
Due to steering , cornering and braking forces ? I suppose so .
Sorry, no comment on choice of tyres .

I see no harm in using other brand but bear in mind tyre life may differ between Left and right sides .

Anyway, you're stucked with a scenario of 'unbalanced' tyre life on one axle now .

The specs on this 2nd screen shot is different from that of the 1st screen shot , in absolute numbers in degrees .
Not sure whether specs on 1st screen shot is valid or not , but who knows ?

This 2nd screen shot is before toe alignment or after toe alignment ?

Note: If this 2nd screen shot is after toe alignment , these readings are not acceptable .

In other words, did you do toe alignment on this occassion ?

Front camber could be done/adjusted with a BMW ,IMO though I don't own one . Question is with or without certain parts replacement .

Anybody with E46 can clarify this camber adjustment thing ?

Tyre manufacturers always recommend new tyres (especially so when only two units are replaced at a time) should always be installed at rear axle , not front axle .

Your contention of MY-02 having tendency to lose traction in the rain gives you another good reason to install new tyres (of whatever brand/model) .

If you have the habit of prefering fast driving or sporty driving style , rain or no rain and in hard cornering , then please comply with tyre manufacturer recommendation for road safety aka avoiding hydroplaning and/or (highly dangerous) over-steer at cornering .

Then you are kind of 'required' (by tyre manufacturers) to install the said pair of new tyres only at the rear axle .
Front axle installation is sort of 'forbidden' in your context .

Instead of registering 100 km previously on 175 , now it registers 102 km with 195 for the similar distance travelled .

Basing on your statement above , for every 102 km actual travel distance the previous 175 only register 100 km on ODO , hence under-registering by 2 km per 102 km actual distance travelled .

In other words for 10,000 km engine oil change interval with previous 175 , the oil mileage was actually 10,200 km .

The tread depth of my rear set of XM2 185/70R14 is about 2.5-3 mm agak agak, slightly higher than twi wear indicator. May be can lasts me about another one year? It has last about 100k kms so far.
Do you think it is advisable to call to confirm their stock first before visiting them or just drive straight there ? If stock is available, how long got to wait in your opinion?

Yep, you know it very well there is still allowance aka residual tread depth life left .......
according to tyre manufacturers and government laws the world across.

Rubber compound properties of ES may contribute to chipping IDK, but the above tyre photo (not yours) points to outside edge wear which are alignment-related , made worse being a front steering axle tyre.

Tyre rotation would spread out 'abnormal' wear (if any among 4 tyres, not resolve it) related to specific location (of Left Front or Right Front etc) camouflaging problem in a specific location of axle.

I personally prefer a 2 year old tyre (hopefully with some discount) to a 2 month old tyre for its slightly hardened rubber and more tahan lasak delivering good tyre longevity.

No comment on tyre brand.
