UV filter depends what type you buy, but the bare minimum would be a multicoat filter. Else its better not to have one at all for kit lens, just have your hood on all the time.

Another thing to note is the diffraction limit for D800 vs. D700. If I remember correctly, D800 is at f/8, D700 at f/16. (I could be wrong... but its around there).
Also to add on, D800 and D7000 is pretty similar pixel density. Oh yes the new D7100, 24MP DX? I wonder what's their diffraction limit like... f/5.6 maybe? |

Talking about salt water, last year I was at Albany The Gap and water was sprinkling like crazy due to the strong wind. Ended up my filter looked like this when I got back to the car.
