For enchanting, you need a stat to replaced with something you want.

For example, my Jawbreaker, I can re-roll the Vitality for a socket:

For that matter, if you want to keep the vitality, you can choose any other stat, however, there is some limitation. You cannot re-roll "Life after kill" affix to a socket:

As you seen in that photo, the "Possible Properties" has no Open socket.
