I think our mums (or every one of us, actually) have reasons to worry because most researches are just that, researches. And there will always be errors and biases in those, not to mention a lot of scientifically-proven stuff like whether or not egg contains high cholesterol etc have been debunked, proven, debunked again and proven again countless of times by different researches by different people using different methods under different conditions.

But tbh with you, why does most mothers think that eggs are bad for us? I would say that it is because they are being fooled by the current food marketing gimmick where low fat product = good product, cholesterol = bad. Both of these mindset are totally wrong yet majority of people believed in it. So the only way to make your mum into believing that eggs aren't that bad is that we need to educate them.So for me, even though I like eggs, I try to stay within 3 daily
My mum scold me because I like to drink diet coke (my bb nutritionist friend in US drank 2L diet coke each day), saying it is bad for me. So what I did was I check my sugar blood level with all my siblings and guess what, mine was the lowest. We educate them that way, because we know that they are believing something that isn't true.
Now my current diet would consist of 4 whole large eggs (8.5g protein per egg) each day.
