Apple (top-right-corner) > System Preferences > International

Did you download the mp3s from chinese website? Most of the time they use different encoding for the chinese characters. So what I'll do normally is to edit them myself. There should be a better way to get around it.

I can think of 3 ways (I'm not sure if they work):

1. Change the default locale or language of your Windows.
2. Edit the chinese characters directly.
3. Open iTunes using AppLocale (http://www.microsoft.com.nsatc.net/globaldev/tools/apploc.mspx) with locale/language set to chinese.

you mean you are using iTunes on Pc not Mac?

go Control Panel > Regional and Language> Languages >tic "Install files for east asian language" (make sure u have Window CD with u) > Advanced > choose Chinese (Hong Kong S.A.R) for Traditional chinese or Chinese (PRC) for simplified chinese .
