I'm using 2x7970 OC to 1300/1700 with WC setup using dual pumps, cpu OC'ed to 4.8GHz at 1.38v and Max I saw power consumption pulled from my PSU was 780W only. So GTX680 SLI of course no problem at all. Unless you plan to go for trifire, your current PSU is good enough already for Dual cards setup.

It's corsair Link software that comes together with AX1200i bro. For normal 24/7 you will not utilize even 85% of total power even when highly overclocked. regarding utilizing 90% of max total power, it wont damage the other parts inside, if anything happen you still get covered by their warranty. A 780W max power draw above not for 24/7 bro..normaly 24/7 for me using 2x OC'ed 7970s and cpu at 4.5GHz are about 4xx-5xx full load, you need not worry bro as you already have a powerful PSU
