I just plain view on basic use as a phone. I did not touch much on new features.
For new features, in my opinion, Samsung add-on a lot motion features, some of it is useful (previous Smart Stay), some is useless (Smart Scroll, Flip page), some is for fun only (Air View, Smart Pause).
HTC wise is Blinkfeed, this feature I quite like it actually, it is something new in Android, you get a total different taste and view on Android device. But if you love customization, Blinkfeed as main page will dismiss all possible customization, lucky HTC still add an option set others page as default homescreen. This part HTC do it really well, it will be much better if got option to completely turn it off.
Xperia Z wise, sorry, they is no extra features add on at all, it just basically a pure Jelly Bean with better theming to make it look much nicer.

Biase? I didn't talk much on Z and didn't said Z is the best. Z is balance in term of performance & design for me. But frankly said, Z don't have any extra features other than Jelly Bean suppose. It just a theme Jelly Bean device. Animation at Z also not enough smooth, it can't compare with HTC One smoothness, it still got cut frame issue. But it is better than S4 which terrible slow down, you more play, more noticeable lagging in animation part.

Agree, different user different perception. But at least, yesterday me and my friend both shake head in S4 smoothness performance, it is quite bad, never good than S III. HTC One smoothness wise is great, we don't find any big lag issue in overall include it blinkfeed which run perfectly smooth. The only part I seen HTC One not run smooth enough is the animation when you go in and went out from app drawer.
