They are surveying the market pattern and demand on a certain subject (product, service and etc.). It depends which field or subject they're doing their market research on ...

A market researcher does exactly that - research the market. My frens who are in it have to prepare surveys, forms, product promotions, etc to see how receptive the market is to a product/service. You can also expect to be involved in interpreting and analysing the results.
